Late spring and early summer is the best time of year for seafood. Fish and shellfish are generally in their best condition and the end of cold weather puts us more in the mood for lighter cooking. With 7500 kilometres of coastline on some of the world’s richest fishing grounds, India has a lot to offer by way of seafood cooking and we’ve tried to present some indication of its variety.
