Pondicherry – or Puducherry as it is now called – is a former French colony on the Southeast coast of India. Puducherry is a French-tinged enclave located entirely within the state of Tamil Nadu and it’s cooking is properly referred to as a creole cuisine, a mix of European and non-European cooking. This is South Indian cooking with a French accent and like other creole cuisines, the blending of flavours is its strength.
