We’re taking a break from the traditional, regional cooking of the Tiger Trail specials we’ve been doing this year. So for our 29th Anniversary celebration the kitchen has produced some of their own dishes, with inspiration from the many cuisines of India but also drawing on other ingredients and methods.
But this ability to evolve has always been the genius of Indian cooking.
